Pesto Mushroom Salad

This salad is great for a high fat, low carb diet. If this is not your style of eating, you may want to modify it a bit to reduce the fat. I NEVER recommend eating high fat with a high carb diet.

2 pints sliced mushrooms
1 tablespoon olive oil
4oz crumbled goat cheese
¼ cup pepitas (or nut or seed of your choice)
8 cups arugula
2 cups pesto (I make my own, but you can use store bought if you find one you like.)

Heat oil in pan and add mushrooms. Brown mushrooms until cooked through.

Place 2 cups arugula in bowl and top with mushrooms. Sprinkle with goat cheese and pepitas. Drizzle with pesto.
